Green Juice + Chopped Salad

Got the Breville Ikon Juicer....and I'm kinda obsessed it...I consider myself pretty low-maintenance and this juicer is just that.

Ingredients:
Green Juice:
1 bunch of kale
1 bunch of spinach
3-4 stalks of celery (and the leaves, or not)
1 whole piece of fruit: green/red apple, pear, or fresh pineapple (whatever is available to me as fresh...but I need something sweet to off-set the greens)
1 whole peeled lemon
small piece of ginger (be careful as this can make it too spicy...I have also used garlic when ginger is not on hand)
1 cucumber with skin

(sometimes I will use a carrot but this will throw off the color. . . .)

Directions:
Wash everything and shake dry (I like it if the fruit comes straight out of the fridge so the juice is cold)
Send everything through the juicer one by one
Then stick your juice in the freezer for like 3-5 minutes or so to chill it down again before drinking it (clearly I like it really cold)...probably should be longer but I get impatient
Makes about 14 to 16 ounces of juice...which is about my serving size...sometimes more sometimes less depending on what size fruits I use.


Chopped Green Salad:
kale
butter lettuce
red onion
fresh fruit...strawberries, blueberries and pomegranate seeds
sunflower seeds
carrots
dried cranberries
chopped walnuts

Honey Vinaigrette this changes...all.the.time.
cup red wine vinegar
extra-virgin olive oil
1-2 teaspoons honey
2 tablespoons freshly squeezed lemon juice
1 clove garlic, minced (or not)
some kosher salt and freshly ground black pepper

Directions:
Wash everything, chop and mix.
When I make a juice or salad I use whatever is on-hand and fresh... I constantly mix it up... I am a firm believer in balance....
